The Easiest Recipe Ever – Buffalo Chicken Meatballs

If you are looking for a quick dinner idea, potluck or appetizer recipe you are in luck! I was never a big meatball person until I came up with this recipe and it has now been on repeat each week in our house for awhile now.

I love anything buffalo flavored. If you do too, give this recipe a try! We will normally have it with a salad or if we’re having a cheat meal some form of potato.

Ingredients:

  • 1 package of ground chicken breast
  • Buffalo sauce of your choice (We like Frank’s)
  • 1/2 cup of panko bread crumbs
  • 1 egg
  • 1 packet of ranch seasoning
  • 1 tsp. of onion powder
  • 1 tsp. of garlic powder
  • Chopped green onion to garnish (optional)
  • Ranch to drizzle over top (optional)

If you are trying to stay healthy, skip the ranch or opt for fat free!

How to Make Buffalo Chicken Meatballs:

  1. Preheat oven to 400 degrees F.
  2. Add all ingredients (except green onions) to mixing bowl
