If you are looking for a quick dinner idea, potluck or appetizer recipe you are in luck! I was never a big meatball person until I came up with this recipe and it has now been on repeat each week in our house for awhile now.
I love anything buffalo flavored. If you do too, give this recipe a try! We will normally have it with a salad or if we’re having a cheat meal some form of potato.
Ingredients:
- 1 package of ground chicken breast
- Buffalo sauce of your choice (We like Frank’s)
- 1/2 cup of panko bread crumbs
- 1 egg
- 1 packet of ranch seasoning
- 1 tsp. of onion powder
- 1 tsp. of garlic powder
- Chopped green onion to garnish (optional)
- Ranch to drizzle over top (optional)
If you are trying to stay healthy, skip the ranch or opt for fat free!
How to Make Buffalo Chicken Meatballs:
- Preheat oven to 400 degrees F.
- Add all ingredients (except green onions) to mixing bowl
- Mix together with hands and form into 1″ meatballs
- Place on baking sheet lined with parchment paper
- Bake meatballs for 12 – 15 minutes or until lightly browned
- Place the meatballs in the crockpot and cover completely with buffalo sauce
- Cook in crockpot on low for 2 hours
- Garnish with ranch and green onion
